The climate in India is both rich and diverse. Vegetables can be found in a wide variety thanks to their diversity. One of the sub-sectors of the food processing industry with the fastest growth is vegetables. When it comes to vegetable production, India currently ranks second in the globe. It is also the third-largest net exporter of veggies.

The onion holds the first spot in terms of export value. The export of potatoes as well as various green vegetables like bitter gourd, okra, and green chillies has increased recently.

Onions of a higher quality for export are quite different from those you would get at your neighborhood supermarket. Onions for export are typically rated based on size. They must have a minimum diameter from 40mm to 65 mm. This is due to the volume efficiency and shrinkage that larger onions take into account. To reduce the shrinkage of onions we use a reefer containers, which is typically 20 feet long and has a holding capacity of 12.5 tonnes. All onions shrink throughout transportation when it comes to their size. Therefore the bigger the onion, the better its chances of arriving in a good state.”

The plant known as the chilli (Capsicum annuum L.) is an annual or perennial herbaceous or semi-woody plant in the Solanaceae family.  Vitamin A, B, and vitamin sources are abundant in fresh chillies. The high carotenoid concentration in chillies is what gives them their nutritional worth because they act as provitamin A, which when digested, turns into vitamin A. Whether used in the home or as a spice on the market, chilli is highly demanded all year round. Due to its many uses in fresh, cooked, and dried forms, there is a great demand for it.  Since chillies have a short shelf life and are very perishable.

The vibrant colour of vegetables is the most important quality factor that influences consumer food choices. Many factors influence colour and texture, including temperature, relative humidity, and other meteorological conditions. Storage at low temperatures and high relative humidity improves the quality of the crop. Chilli, on the other hand, is oversensitive to chilling harm, hence storage temperatures over 5 °C are regarded appropriate.

Packaging provides physical protection against contamination and mechanical damage, as well as a modified atmosphere in which produce develops its own micro-atmosphere, which slows physiological metabolism and improves crop shelf life.  The interaction of the natural process of produce respiration with the restricted gas exchange across the polymeric film package to control the in-pack O2 and CO2 extends the shelf life of fresh produce packaged in polymeric film packages using modified atmosphere packaging (MAP) and low temperature storage. In modified environment packaging, spoiling agents such as bacteria, fungus, and yeasts are repressed, hence keeping the quality of a perishable item or extending its shelf-life. Various levels of CO2 and O2 concentration are necessary.

India is frequently referred to as "the world's fruit basket." The favourable climatic and soil conditions in India support the growth of a variety of crops, including fruits, vegetables, grains, pulses, and other types of crops. The majority of fruits, such as mangoes, bananas, papayas, oranges, apricots, grapes, strawberries, apples, guavas, litchis, and many others, are grown in India. As a result, India has been exporting more fruits for a few decades.

(for Example) In the fiscal year 2018–19, “India exported over 372213.73 metric tonnes of fruit”.
